Sausage. made my own batch with my seaonings, fail, second batch I used Sausage Maker bratwurst seaonings, I put a cure in it and it had 3 times too much salt in it. I tossed the batch. The flavor was unbelievable but they must have had a cure in too. I`m going to stay on this until I perfect it, it was that good. Pork picnics or the front ham have the right fat to meat ratio. Too little fat and your sausage is dry. You cook your sausage to quick and it boils out the fat, dry. cook it too slow, and we cook low and slow in our smokers, and you can get sick from it. Read up before doing sausage.
