April 23, 2010Season with rib rub both sides, cook curved side up at 225 degrees, 1.5 hours, remove and lay each half rack foil big enough to cover, lay the bbq sauce of choice on ribs both sides. You don`t have to over do it with the sauce, the foil keep all dat goodness in. 2.5 more hours. 156 degrees. Bee careful taken those ribs out they make some juice. I took 1.5 racks out of my smoker and just 1/2 rack the foil unfolded and laid it`s juice on my chest. I said it feels like hot cheese but I`m not gonna let go these ribs cause tomorrows my birthday. I was a little red in the chest the next day but those ribs, some beers and good friends made it all worth it.

April 28, 2010What do you use to get the layer of fat or whatever it is on the bottom side of the rib before cooking? I tried to peel it off but I can`t get a good enough grip. I had a friend of mine tell me to just use a fork and scrape it all so it just burns off on the grill. I dunno!
March 7, 2011i used a rag to grab a corner and pull the membrane off.... you can scrape it off as well
